Blueberry Muffins
In the spring, Qās favorite thing to bake with is fruit. Strawberry tarts, lemon meringue pies, banana bread, lemon poppy seed bread, apple cake, lemon bars (lemon is delicious. It is a superior flavor. Q will not hear otherwise)
One thing he can never resist, though, is blueberries. They remind him of his first flat, the one with the tiny windows and shitty airflow that heād lived in for one terribly hot summer, when heād mostly sat around in his pants and snacked on frozen blueberries. They remind him of the blueberry smoothies heād get from the campus coffee shop in uni (āNo, not blueberry-banana, I just want the blueberries. No, not mixed berry, either.ā). They remind him of his grandmotherās blueberry pie, made only for special occasions, the recipe for which is carefully locked away in his study - he has a typed and printed copy in his kitchen, of course
Itās the pie recipe that gives him the brainwave for his blueberry muffin recipe, as it happens. How hasnāt he thought of putting lemon juice in blueberry muffins before now?
For the Muffins:
2 C all-purpose flour
¾ C granulated sugar
2 tsp baking powder
1 ½ tsp cinnamon
½ tsp salt
1/3 C milk
½ C butter, melted
¾ tsp lemon zest
½ tsp lemon juice
1 egg
1 C blueberries (fresh or frozen)
For the Topping:
¾ C all-purpose flour
½ C golden brown sugar
¼ C butter, softened
1 tsp cinnamon
For the muffins:Ā -Preheat oven to 350 degrees Fahrenheit -In a bowl, combine flour, sugar, baking powder, cinnamon, and salt -In another bowl, whisk together milk, butter, lemon zest, lemon juice, and egg. Add to dry ingredients -Mix just until combined -Add blueberries, stir in. If using frozen blueberries, ensure they are thoroughly rinsed and drained -Fill muffin cups line with paper liners or greased 2/3 of the way (2-3 tbsp), sprinkle liberally with topping -Bake for 20 minutes or until a toothpick inserted comes out mostly clean and the topping has browned For the topping: -Put all ingredients in a bowl and combine with pastry cutter or fork until it turns to coarse crumbs
