beer battered cod
When I studied in England back in 2017, I was introduced to mushy peas as the vegetable that accompanies fish and chips! I really enjoyed it, so I normally plan to whip some up whenever I make this dish. It's super easy, and I almost always have frozen peas, so I just need to make sure I have heavy cream.
Today, however, I threw together a new way to eat beer battered cod that I ended up really enjoying! Nothing was bought specifically for this dinner, so the ingredients of the sandwich were determined by the contents of my fridge and pantry.
Brioche bun
Tartar sauce (in practice, mayonnaise + chopped pickle bc we were out of relish)
A slice of dill pickle
Pickled red onions
Lettuce leaf
(Served with brussel sprouts and potato rounds with malt vinegar)
This doesn't really merit its own recipe, but I enjoyed it enough to share it!
