Pickled Jalapeño Eggs
I got a jar of pickled jalapeño quail eggs from Walmart today to try, but at 470 mg of sodium in 2 tiny eggs it was way too salty for my dad to try. We had a bunch of boiled eggs from this past weekend, so I checked out the ingredients list of the store-bought version and made my own attempt!
Here's what I used:
Badia brand Crushed Red Pepper
Home-pickled jalapeños (fresh jalapeños in white vinegar)
Minced garlic in water
Peeled hard-boiled eggs
White vinegar
Water
I've stuck the jar in the fridge and I'll leave it there for at least one day before anyone tries the eggs (longer than that would be better but I am not optimistic about my dad's self control on that front 😂).
My mom was concerned that the salt might be necessary for pickling, but I've pickled other vegetables without it, and I can see bubbles moving in the liquid! So we'll see how it turns out...

Not really sure of the best way to make sure things are seasoned appropriately for people with a lower spice tolerance than you...
I had a cajun crawfish boil last night and made my own cajun seasoning so that the seasoning mix would be salt free/gluten free but I ran out of cayenne before I was satisfied with the level of spice in the dish...
Turns out that was a good thing bc my dad was satisfied with the taste and my mom couldn't feel her lips after a bit
She made direct eye contact with me at one point and pointed down at her cup to show me she'd gone and grabbed a glass of milk to help 😂
Personally I'm not the one who needs to avoid salt and gluten so I added a little Slap Ya Mama cajun seasoning on top and was very satisfied
But yeah my dad and I like spice but mom can't handle it and I have a really hard time telling how much is too much for her when I'm cooking...
beer battered cod
When I studied in England back in 2017, I was introduced to mushy peas as the vegetable that accompanies fish and chips! I really enjoyed it, so I normally plan to whip some up whenever I make this dish. It's super easy, and I almost always have frozen peas, so I just need to make sure I have heavy cream.
Today, however, I threw together a new way to eat beer battered cod that I ended up really enjoying! Nothing was bought specifically for this dinner, so the ingredients of the sandwich were determined by the contents of my fridge and pantry.
Brioche bun
Tartar sauce (in practice, mayonnaise + chopped pickle bc we were out of relish)
A slice of dill pickle
Pickled red onions
Lettuce leaf
(Served with brussel sprouts and potato rounds with malt vinegar)
This doesn't really merit its own recipe, but I enjoyed it enough to share it!
