Chai Tea Shortbread Cookies! So fun, so easy, and so perfect to bring to your next tea party or home gathering.
INGREDIENTS Cookies:
1 cup (2 sticks) unsalted butter
½ cup powdered sugar
2 cup all-purpose flour
½ tsp salt
2 bags of loose Chai Tea
Icing:
Approx. 1 cup powdered sugar
Approx. 2 tbsp milk (or water works!)
Sprinkle of ground cinnamon
Small splash of vanilla extract
INSTRUCTIONS
1. Preheat oven to 350°.
2. In a large bowl, cream together butter and powdered sugar.
3. Add in flour, salt, and loose tea leaves. Continue to mix until a soft dough forms (the mix will be dry and crumbly at first, but will form together!).
4. Roll out dough on a lightly floured surface until it’s ¼ inch thick.
5. Cut out dough using your favorite round cookie cutter.
6. Bake on a parchment-lined baking sheet for 18-20 minutes or until edges are a golden brown and transfer to a cooling rack (so bottoms don’t over-bake!).
7. In another bowl, whisk icing ingredients together until smooth (alternate adding powdered sugar and tiny amounts of milk at a time until you reach your desired consistency).
8. Once cookies are cooled, drizzle, dip, dunk, or spoon the icing over, however you’d like to decorate.
9. Garnish with small piece of rosemary for some special flare!
10. Gently lift cookie, pinky finger extended, and give a toast to something you love before enjoying with a cup of tea.
