#27bakes number...25! #AppleStrudel it’s like an apple pie fell in love with a cinnamon roll, and the child was raised by phyllo dough. Honestly I thought the dough stretching was going to go a lot worse but aside from a two small holes in the corners, no breaks! This is an extremely stretchy dough, aided I think by a few days in the fridge because my schedule is nutzo. The humble, complex, tempestuous #AppleCiderDoughnut. I took a crack at these last week and failed miserably. Last night and this morning, back in my home kitchen, armed with a wok, clip thermometer, a nifty new bench scraper, and the can-do to make it happen, I tried again. Y’all. These are very good. Of course anything deep fried and rolled in sugar isn’t gonna be terrible but I’m so so happy with how these turned out. The first of the #27bakes where I hurt myself and the first where I really feel like I failed. In a moment of hubris I said, “nah I don’t need a deep fry thermometer” and succeeded in over-browning my #appleciderdoughnuts while leaving them mostly raw in the middle. Absolute trooper @ellebellemagee tried one of the thinner ones that was nearly cooked through and she and @thomasiancampbell both pronounced them delicious. #27bakes number 23, and the only one so far that has kind of felt close to cheating, since this is the recipe my dad uses for our traditional Christmas morning breakfast. I was apprehensive about theses, I won’t lie. However! Pretty dang good (I had an inside picture but my phone deleted it). A little dismayed by how dark they got in the oven, due to the realities of my day job, I’m living in a house with an unpredictable (and not level) oven. So I’m blaming it on that.
