2018/12/15 두살짜리 아들을 위해 구운 생일 케익. 여태껏 구워본 케익 중 가장 이쁘게 잘 나온듯 :) 스폰지 레시피는 Ready for Dessert by David Lebovitz p. 233에 나온 Sponge Cake recipe에서 살짝 변형했다. matcha powder를 원하는 녹색이 나올때까지 약 2tsp 정도 (?) 추가해주고, 구매한 계란이 작은 편이라, 5 large eggs 대신 계란 6개로 했고, 200g sugar 대신 130g 정도로 줄여서 만듬.

일단 David 레시피들은 실제로 따라해보면 크게 어긋나는 것 없어서 기본적으로 신뢰를 하는 편이라 이 책을 펼쳐들었고, 무엇보다도 일반 all-purpose flour이 아닌 cake flour가 들어가 내가 원하는 가변운 식감에 가까운 것 같아 선택했다. 결과적으로 만족한 편인데, 일부분은 바닥부분이 더 건조하게 나와 살짝 아쉬웠다. 설탕을 줄여서 그런것인지? 책에 나온 원본 레시피: 195g cake flour 1/2 tsp baking powder 1/4 tsp salt 5 large eggs, separated, room temp 60 ml cold water 200g sugar 1 tsp vanilla extract

크림은 일반 헤비크림에 마스카포네 치즈를 추가해주면 맛이 더 좋아진다고 알려준 친구 덕에 아래와 같이 처음으로 해봤는데 대만족! 다행히 조심하면서 했더니 over whip하지도 않아 아주 완벽한 상태로 나왔다. 1 cup heavy cream 1 Tbsp sugar pinch of vanilla powder 2 Tbsp mascarpone cheese 레이어는 스폰지 > 딸기쨈 > 크림 > 생딸기 조각 > 스폰지 > 크림.

Topping은 dried orange, dried strawberries, dried cranberries.
