Yum yum. I don't know about you guys but I only discovered eggs Benedict when I moved over to the East Coast. And BOY was I happy! Yum yum (I know I am repeating myself, but it is so warranted). But yeah, it's bacon (yes), eggs (yes!) and a biscuit (mmm) all topped off with creamy, zesty buttery goodness! What more can you ask of breakfast??? Or lunch or dinner...
This is a PERFECT keto meal sans the biscuit! So I just threw that biddie away since honestly they are usually dry and flavorless and rockish anyways. So it's pretty simple but I thought I would write it up.
So I have had TREMENDOUS difficultly making the Hollandaise sauce! Every time it "breaks" and is super liquidy. Past it wounding my cooking ego, I have stopped caring - it still tastes the same :)
So this is literally the best I could do - please don't make fun of my swimming eggs X)
Details:2.1 g carbs, 466 calories.
4 slices bacon
5 eggs
1/2 stick butter
1 tablespoon lemon or lime juice
a couple dashes paprika
a couple dashes salt
1/2 teaspoon white vinegar
Get out a pot and a pan. Fill the pot with water and set it on the stove over high heat (we want it to boil!) and then pop your bacon on the pan over medium high heat.
Make sure to keep an eye on those but for now you will want to put the yolk of one of those eggs in the blender with the lime juice, paprika and salt. Blend just to get them to mix up a bit.
Now go ahead and pop that half stick of butter in the microwave in a bowl (I just used a coffee cup) until it is boiling (1 minute). You may want to flip the bacon at this point and the water probably won't be boiling yet.
Start running the blender. Most blenders have some sort of small opening on the top so go ahead and open that and, while running, start to spoon the hot butter in. Very slowly. Should take about a minute or two to spoon it all out.
Let it continue to blend a bit.
Now let's poach some eggs! The water should be about boiling now. You'll want to add the vinegar to the boiling water. Now stir the water with a big spoon so it starts to make a tunnel in the middle. As quick as you can: drop the spoon, crack your egg on the side and drop (from right above the water - not too high) the egg straight into the tunnel.
Let sit and the egg whites will curl around the yolk. I prefer to do one at a time because it is less stressful so at this point you can check on the bacon again and maybe take it off if it's done :)
After about two minutes in the boiling water, fish the egg out with a spoon with holes in it (get rid of the water). Set aside on a plate with your bacon if that's done.
Go ahead and do the same with the other eggs: swirl, crack and wait.
Spoon the eggs out and, on the plate with your bacon and eggs, pour the (hopefully thick) hollandaise sauce over them!! YUM!
