I loved the taste of meat. I just have not eaten it since 1993. She says she just cannot get the taste out of her mouth which is a blessing for our business. “These loaves were made out of VWG & my taste memories blend of seasonings. I did a reading and one of my lineage ancestors guided me. This is one of the many reasons why all of our recipes are owned by @ancestralkitchen and licensed to @dropsquadkitchen for commercial use. The #AbundanceMethod is a science and an art. The four main components are aesthetics, texture, seasoning, and of course taste. These loaves required love, time and attention to prepare. Because wheat does not have fat, blood or tissue (I know it sounds gross)we have to rely on the best quality ingredients such as naturally derived salt, sugar, acid, and oils to achieve the four components. Hint: A lot of people rely on steaming or boiling their seitan. I simply do NOT. When I have a taste for something I rely on my intuition or MEAT recipes, especially those that come from prior to industrialization. I am inspired by the earlier cooking processes’ use of heat and whole foods. Many recipes I have found to be vegan because they lacked the refrigeration capacity of today. A habit I see people doing which I think is a mistake, is using food processors and over kneading. It is a wheat protein! That glue- ten is the thing that makes it bind and stretch and give it the unami texture we are all looking for. It should be paired well with other things that compliment the protein like magnesium does calcium. Put your hands in it so you can FEEL what you are working with. Finally, do not over season the seitan.
