Day 2 of 30
Last night I had dreams of eating chocolate icing. I used to eat the stuff by the tub full when I was in college. Finger full after finger full that chocolate icing never did me wrong. Stressed- chocolate icing. Bored- chocolate icing. Happy- chocolate icing. You catch the drift. My overly sweet tooth has always been a problem. I don't think I even remember drinking plain water as a child, always had to be juice. The meals I made had to be sweet as well- chili- sweet-not spicy, honey garlic/ sweet and sour/ teriyaki everything. Sugar sugar sugar. I wasn't one for salty or savory or spicy- if it wasn't sweet, I wasn't interested. Easy to say- this month is going to be a toughie, but much needed.
So lets get back to my late night snacking problem as I'm sure most people have. No? Ok. Last night I knew I was going to want to snack on something sweet so I went with (and pray for me here), 2 rice cakes topped with peanut putter and bananas. I know I know- I'm pretty lame, but I gotta tell you- it actually filled me up and satisfied my sweet tooth. I almost didn't eat the second one- but that may have been because I started watching Walking Dead Season 7 where Negan comes in with his barbwire bat. 🤮
After all was said and done- I of course ate the second one. #snackmonster
Then came the thoughts of breakfast. What was I going to eat? You know being vegan and having to figure out a good breakfast is hard enough but have you ever looked at how much sugar is in each breakfast item we eat? Cereals, my maple and brown sugar oatmeal packets, pancakes/ waffles and maple syrup, bagels, milk... Etc. There's something to look into. Lucky for me I have 2 Vegan cook books from my other mother Wendy and they have served quite useful through this adventure. I made some overnight oats and they turned out quite good. Skipped the added sweetener and granola and smashed in some raspberries in the morning. Very filling.
Today I made sautéed mushrooms. I used Shiitake, Oyster and Enoki mushrooms. I FREAKING LOVE THE ENOKI MUSHROOMS!! The Oyster mushrooms are a great meat replacement, the taste and texture is impeccable. Also highly recommend. Shiitake mushrooms taste like normal mushrooms. Meh. Satisfied with my snack, I was going to save some to put into my Buddha Bowl for supper.. Oops. But dayuuumm that buddha bowl was delicious! Here's the link to make it yourself. For a snack tonight I'm just going to eat some fruit- not satisfactory, but I need to eat it before it goes bad. Wish me luck! Sugar-free Vegan out. 🌱 ✌️
