These Roasted Root Vegetable Buddha Bowls are a hearty and nourishing vegan meal. Packed with a colorful array of roasted root veggies, protein-rich quinoa, creamy avocado, and crunchy pumpkin seeds, these bowls are not only delicious but also satisfying. The maple cinnamon tahini dressing adds a sweet and savory flavor that ties everything together perfectly.
Ingredients: 4 cups mixed root vegetables carrots, parsnips, sweet potatoes, beets, diced. 2 tablespoons olive oil. Salt and pepper to taste. 1 cup quinoa, cooked. 2 cups mixed greens. 1 avocado, sliced. 1/4 cup pumpkin seeds, toasted. 1/4 cup tahini. 2 tablespoons maple syrup. 1 teaspoon ground cinnamon. Juice of 1 lemon. Water, as needed.
Instructions: Preheat oven to 400F 200C. Toss diced root vegetables with olive oil, salt, and pepper on a baking sheet. Roast in the oven for 25-30 minutes until tender and lightly browned. In a small bowl, whisk together tahini, maple syrup, cinnamon, and lemon juice. Thin the dressing with water until desired consistency is reached. To assemble bowls, divide cooked quinoa, mixed greens, roasted root vegetables, avocado slices, and toasted pumpkin seeds among serving bowls. Drizzle with maple cinnamon tahini dressing. Serve immediately and enjoy!
