Agerre Txakolina 2016. Produced on the hills of Basque Country facing the ocean, this natural bubble wine (without being carbonated artificially) is clean, crisp, dry, a little citrusy but also with mineral and slight saltiness. It was delicious when paired with sardine with fresh pineapple and mustard seed sauce. The wine offered a good contrast to the tropical sweetness from the pineapple and balanced the mustard sauce well. They worked together to elevate the sardine to the next level. It was a great pairing. Because of the dryness, crispness and the slight salty note, it will be great with seafood that has sweet fruity sauce with it. Agerre does not produce a lot. If you see other txakoli, they should work in a similar way.
