LCMs - A classic lunchbox treat, but make it vegan and homemade 🧁 Chances are, if you grew us in Australia or New Zealand you had one of these in your school lunchbox at some point 🍫
Basically just marshmallows mixed with rice puffs:
250g vanilla marshmallows (gelatine free) - can cut or tear up in pieces as vegan marshmallows take a bit longer to melt (or so I’ve found)
Chocolate chips or sprinkles to decorate
Melt marshmallows and butter in a saucepan on low to medium heat - mix frequently and ensure it doesn’t start to caramelise or burn on the bottom of the pan.
Line a baking pan or wide container with baking paper.
Place rice puffs in a large bowl and add in marshmallow mixture. Work very quickly to mix together, the marshmallows set quite quickly. Press into the tin to your desired thickness. Top with your chocolate chips or sprinkles (if using), you will probably need to press these into the mixture.
Place in the fridge to set for half an hour or so. Cut into bars and serve. Will keep in an airtight container in the fridge for a few days.
