Vegan Broccoli Pasta with Almond Bacon!
This vegan broccoli pasta with almond bacon is a tasty and filling meal that you can make quickly during the week. The savory, sweet, and smoky flavors of the almond bacon go well with the soft broccoli and pasta.
Ingredients: 200g pasta of choice. 1 head broccoli, cut into florets. 1/2 cup sliced almonds. 2 tablespoons soy sauce. 1 tablespoon maple syrup. 1/2 teaspoon smoked paprika. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. Salt and pepper to taste. 2 tablespoons olive oil. 1 tablespoon nutritional yeast optional. Fresh parsley for garnish optional.
Instructions: Follow the directions on the package to cook the pasta. Boil the water and add the broccoli florets last three minutes of cooking. Remove the water and set it aside. Get soy sauce, maple syrup, smoked paprika, garlic powder, and onion powder in a small bowl. Mix them together to make the marinade. Put olive oil in a pan and heat it over medium-low heat. It will take about three to four minutes of toasting after adding the sliced almonds until they are golden brown. Spoon the marinade over the toasted nuts and mix them around to cover them all. After another minute or two, cook the almonds until they are golden and crispy. Cook the broccoli and pasta and then mix them with the almond bacon. If you want, you can add nutritional yeast and salt and pepper to taste. If you want, you can add fresh parsley as a garnish before serving.
