This tasty and simple burrito bowl recipe takes you to Hawaii in a bowl. For a filling meal, rice, beans, and fresh toppings go great with pulled pork cooked in a sweet and savory sauce.
Ingredients: 3 lbs pork shoulder, trimmed and cut into chunks. 1 cup pineapple juice. 1/2 cup low-sodium soy sauce. 1/4 cup honey. 3 cloves garlic, minced. 1 tbsp ginger, grated. 1/4 tsp red pepper flakes. 1/4 cup tomato paste. 1 red onion, sliced. 2 bell peppers, sliced. 2 cups cooked rice. 1 cup black beans, drained and rinsed. 1 cup corn kernels. 1 avocado, sliced. 1/4 cup cilantro, chopped. Lime wedges, for serving.
Instructions: Put pineapple juice, soy sauce, honey, garlic, ginger, red pepper flakes, and tomato paste in a slow cooker. Add the pork shoulder. The pork should be cooked on low for 7 to 8 hours or high for 4 to 5 hours, until it is soft and easy to shred with a fork. Use two forks to shred the pork, then mix it well with the sauce. To make the burrito bowls, put cooked rice, black beans, corn, shredded pork, sliced avocado, bell peppers, and red onion in a bowl. Serve with lime wedges and chopped cilantro on top.
