Caramel Apple Enchiladas Recipe
((Today on "I should be writing instead of--" I give you this!!
It's one of my personal favorites (I would have made Empanadas, but this was easier to do), so I hope you all enjoy!

Homemade Caramel Apple Filling:
((We had apples that needed to be used before they went bad, so I figured why not make this for desert tonight.
However, keep in mind that you can skip this whole step by simply using store bought apple pie filling, it works just as well))
You will need:
7 small/medium apples (any kind of apple will do. We had Gala apples to use up, but usually Granny Smith is the best choice to cook with when doing sweet dishes)
3 Tablespoons lemon juice (i’m gonna say optional, considering we didn’t have this and it turned out just fine)
1 cup of brown sugar packed firmly (light or dark brown sugar, it does not matter)
2 Tablespoons ground cinnamon
2 Tablespoons butter
3 Tablespoons of corn starch
1 cup water
1 teaspoon Vanilla Extract
How to cook:
Peel, core and slice your apples and toss them in a bowl with the lemon juice (again, lemon juice is optional).
In a separate bowl, whisk together the brown sugar, cinnamon, and corn starch. Whisk/stir well.
In a sauce pan, heat up apples, butter, water, vanilla extract for 8 minutes on low heat (I recommend covering it after stirring for 1 minute)
After 8 minutes, the apples will break down but it should still be chunky, so fear not.
Keeping the apples on low heat, mix in your dry ingredients, whisk and stir constantly until mixture thickens (roughly 3-4 minutes)
Remove from heat
separate 1/3 of the mixture to use for topping, the other 2/3 will be used for your filling
((side note: this recipe works very well for Caramel Apple Empanadas, Apple Pie Filling, or even as an Ice Cream topping.
Basically, whatever is a-peel-ing to you, then go for it!!)

Apple Enchiladas:
You will need:
Caramel apple filling or 21 ounce can of apple filling (depending on what you decide to use)
4-7 flour tortillas (I used the largest size cause that’s all we had in the house, so it made 4, but you can use smaller tortillas to stretch it to 6-7)

Enchilada Sauce topping (only use this if you have store bought apple filling):
((If you’ve decided to use the Caramel Apple filling from above, then skip directly to “Assembling and Cooking” please.))
You will need:
1 teaspoon ground cinnamon
1/3 cup margarine/butter
1/2 cup white sugar
1/2 cup packed brown sugar (again light or dark, does not matter)
1/2 cup water
How to cook:
In a sauce pan, bring your butter, white and brown sugar, and water to a boil on medium heat.
Once you’ve reached the boiling point, reduce heat and let your mixture simmer, stirring constantly for 3 minutes.
Assembling and Cooking:
Pre-heat your oven to 350 degrees F (175 degrees C)
Take a cake pan 8x8 or larger (depending on the tortilla size you use) and lightly grease it
Spoon your apple filling evenly on all tortillas. If you are using store bought, then use it all up. If you are using the Caramel Apple filling, then use the 2/3 you’ve set aside.
Roll up your tortillas and place them seam-side down on your lightly greased pan.
***If you made the Enchilada sauce topping, then pour it evenly over your rolled tortillas
***If you used the Caramel apple topping, then take your 1/3 mixture and pour evenly over your rolled tortillas
Sprinkle cinnamon over top.
Place in preheated oven for 20 minutes
Let stand for 5 minutes (or until cool enough to eat) and enjoy!
