Grease the sides of a 9-inch round cake pan and use baking paper or a non stick insert on the bottom for easy removal later. . Peel, core and slice the apples. Put the apples into a medium saucepan with 2 Tbsp butter and cook over medium heat for about 5 minutes or until apples are just starting to soften. Set aside to cool. In a large mixing bowl, mix the softened butter and sugar with a whisk until light and fluffy. Mix in eggs one at a time and beat well. Fold in the flour and almonds, and add the splash of brandy or rum. Fold in half of the apples. Then pour the batter in the round cake pan. Arrange the remaining apples on top and lightly press them into the batter. Sprinkle with cinnamon. Bake in the over for about 50 minutes or until the top is golden brown and the cake springs back to the touch. Cool and serve.
