A delicious twist on the classic cinnamon roll, these vegan oatmeal apple cinnamon rolls are made with healthy oats and sweet apples for a hearty and tasty treat.
Ingredients: 2 cups rolled oats. 1 cup almond milk. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 tbsp ground flaxseed + 3 tbsp water flax egg. 1 tsp vanilla extract. 1 1/2 cups all-purpose flour. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 2 apples, diced. 1/4 cup brown sugar. 1 tbsp cinnamon.
Instructions: Preheat oven to 350F 175C. In a small bowl, mix ground flaxseed and water, let sit for 5 minutes to thicken. In a large bowl, combine rolled oats, almond milk, maple syrup, melted coconut oil, flax egg, and vanilla extract. Let sit for 10 minutes. In another bowl, mix flour, baking powder, baking soda, and salt. Add dry ingredients to wet ingredients and mix until dough forms. Roll out dough on a floured surface into a rectangle. Spread diced apples evenly over the dough. Mix brown sugar and cinnamon, then sprinkle over the apples. Roll up the dough tightly and slice into rolls. Place rolls in a greased baking dish and bake for 25-30 minutes, until golden brown. Serve warm and enjoy!
