Dessert for one? Ok, IF I have to share, for two. Baking day #4 yesterday — I still have some apples. So I made small pies and crisps like this one, with roasted apples topped with an oat streusel. I have a few apples left, so …. I’ll keep you posted. Meantime, here’s the recipe for the oat streusel (you can use it for pies, crisps and cakes. It’s nut-free. STREUSEL: 1/4 cup all-purpose flour 1/4cup rolled oats 2 tablespoons sugar 1/4 teaspoon ground cinnamon 1/8 teaspoon salt 1/4 cup cold unsalted butter, vegetable shortening or margarine, cut into chunks Place the flour, oats, brown sugar, cinnamon and salt in a bowl and mix ingredients to distribute them evenly. Add the butter and work it into the dry ingredients with fingertips or a pastry blender until the mixture looks like coarse meal.
