The savory and sweet flavors in this grilled ginger chicken with apricot chutney go so well together. The ginger and garlic in the marinade give the chicken a sour taste, and the apricot chutney gives it a fruity tang. This dish is great for grilling in the summer or whenever you want to impress someone with little work.
Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons grated fresh ginger. 2 cloves garlic, minced. 1/4 cup soy sauce. 2 tablespoons honey. 1 tablespoon sesame oil. Salt and pepper to taste. 1 cup apricot preserves. 2 tablespoons rice vinegar. 1 tablespoon Dijon mustard. 1/4 teaspoon red pepper flakes.
Instructions: Grate ginger, mince garlic, soy sauce, honey, sesame oil, salt, and pepper into a bowl. Make sure the chicken breasts are well covered when you add them to the marinade. Put the meat in the fridge for at least 30 minutes and up to 4 hours to marinate. Warm the grill up to a medium-high level. Take the chicken out of the marinade and throw away the extra marinade. Cook the chicken on the grill for 6 to 8 minutes on each side, or until it's done and has grill marks. Get the apricot chutney ready while the chicken is on the grill. Put apricot preserves, rice vinegar, Dijon mustard, and red pepper flakes in a small saucepan. Over medium heat, stir the sauce and preserves every now and then for about 5 minutes, or until the preserves melt and the sauce is well mixed. Put grilled chicken on a plate and top it with apricot chutney.
