This saffron-infused rice pilaf is elevated with the sweetness of red bell pepper and the crunch of toasted almonds. It's a flavorful and aromatic dish perfect for any occasion.
Ingredients: 1 cup long-grain rice. 2 cups vegetable broth. 1 pinch saffron threads. 1 tablespoon olive oil. 1 small red bell pepper, diced. 1/4 cup sliced almonds, toasted. Salt and pepper to taste.
Instructions: In a small bowl, soak saffron threads in 2 tablespoons of warm water for 10 minutes. In a medium saucepan, heat olive oil over medium heat. Add diced red bell pepper and saut until softened, about 3-4 minutes. Add rice to the saucepan and stir to coat with the oil. Cook for 2-3 minutes, stirring occasionally. Pour in vegetable broth and saffron water. Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed. Once rice is cooked, fluff it with a fork and stir in toasted almonds. Serve hot.
