Instructions: In a slow cooker, combine mushrooms, onions, bell peppers, garlic, olive oil, tamari or soy sauce, balsamic vinegar, vegan Worcestershire sauce, thyme, rosemary, and black pepper. Pour vegetable broth over the mixture in the slow cooker. Cover and cook on low for 6-8 hours, or until vegetables are tender. Preheat oven to 350F 175C. Split sandwich rolls and place them on a baking sheet lined with parchment paper. Remove cooked vegetables from the slow cooker using a slotted spoon, and place them on the sandwich rolls. Top each sandwich with a slice of vegan cheese. Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and the rolls are slightly toasted. Serve the sandwiches warm with a side of au jus from the slow cooker for dipping.
