Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 2 tablespoons Meyer Limoncello. 2 teaspoons Meyer lemon zest. 1 teaspoon vanilla extract. 2 large eggs. 3 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon salt. Powdered sugar, for dusting.
Instructions: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the Meyer Limoncello, Meyer lemon zest, vanilla extract, and eggs. Mix well until combined. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough in half and shape each half into a log about 2 inches in diameter. Wrap the logs in plastic wrap and refrigerate for at least 2 hours or until firm. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled dough logs into rounds about 1/4-inch thick and place them on the prepared baking sheet. Bake for 10-12 minutes or until the edges of the cookies are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
