This is a simple and tasty keto-friendly recipe for cooking artichokes that can be used as an appetizer or side dish.
Ingredients: 1 large artichoke. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 lemon, halved. Salt and pepper to taste.
Instructions: Trim the top and stem of the artichoke. Cut off the pointed tips of the leaves with kitchen shears. Place the artichoke in a steamer basket over boiling water and steam for 25-30 minutes or until tender when pierced with a fork. Meanwhile, heat olive oil in a small saucepan over medium heat. Add minced garlic and saut until fragrant, about 1-2 minutes. Once the artichoke is cooked, remove from steamer and let cool slightly. Serve the artichoke warm with the garlic-infused olive oil for dipping. Squeeze lemon juice over the artichoke before eating and season with salt and pepper to taste.
