ive never heard of those but they look GREAT
It's basically a pie with a lemon custard filling topped with a layer of meringue (egg whites and sugar that are well beat to soft fluffy peaks). The pie crust baked beforehand and cooled before you add the rest and after that the whole pie goes back into the oven for a bit to "brown" the outside of the meringue. (There are different types of meringue btw.)
