These vegan asparagus and parmesan filo rolls are a delightful appetizer or snack option. The crisp filo pastry encases tender asparagus spears, while the vegan parmesan adds a savory depth of flavor.
Ingredients: 1 bunch asparagus spears, trimmed. 1 cup vegan parmesan cheese, grated. 1 package vegan filo pastry sheets. 1/4 cup olive oil, for brushing. Salt and pepper, to taste.
Instructions: Turn on your oven and heat it up to 375F 190C. For two minutes, blanch the asparagus spears in boiling water. Then, move them to a bowl of ice water to stop the cooking. You can use paper towels to dry. Spread out one sheet of filo on a smooth surface. Use a little olive oil to clean. Add a layer of vegan Parmesan cheese on top of the sheet of filo pastry. Put a spear of asparagus on one end of the sheet of filo pastry, and then roll it up tight. Do it again with the rest of the filo pastry sheets and asparagus spears. Place the rolls seam-side down on a baking sheet that has been lined with parchment paper. Add salt and pepper to the rolls and brush the tops with a little more olive oil. The filo pastry should be baked in a hot oven for 15 to 20 minutes, or until it is golden brown and crisp. Enjoy while hot!
