Homemade ravioli that taste great and are full of nettles and creamy ricotta cheese. They are perfect for a comforting meal.
Ingredients: 200g nettle leaves. 200g ricotta cheese. 1 egg. Salt and pepper to taste. 300g pasta dough. Grated Parmesan cheese for serving.
Instructions: Blanch nettle leaves in boiling water for 1-2 minutes, then plunge into ice water to stop cooking. Drain and squeeze out excess water. Chop blanched nettle leaves finely and mix with ricotta cheese, egg, salt, and pepper. Roll out pasta dough thinly and cut into circles using a cutter. Place a spoonful of nettle and ricotta mixture onto half of the pasta circles. Brush the edges of the pasta circles with water and cover with another pasta circle, pressing down to seal tightly. Boil ravioli in salted water for 3-4 minutes until they float to the surface. Serve hot, sprinkled with grated Parmesan cheese.
