Assam Pedas Ikan Pari Spicy Stingray A true traditional Malay dish and Mutiara Restaurant on Ponsonby Road is one of the few places that such delicacies can be found. It’s one of the specials that Chef Roy @mutiara_restaurant has in his repertoire when he’s asked to come up with real traditional Malay dishes. Stringray is readily available from Chinese supermarkets. Chef Roy chooses the small ones as the flesh and “wings“ are more tender. Assam Pedas Ikan Pari has distinctive flavours - you can taste spicy notes augmented by julienne kaffir lime leaves, curry leaves and sweet and assam (tamarind) juice. The pervasive assam flavour has a sugar sweet ending. Verdict: sedap!
