H O T & SOU R After the Stockroom at Sapphire Show at Sapphire Room, Ponsonby Central, Uncle went to see Chef Roy at nearby Mutiara @mutiara_restaurant. Asked if he had soup, Chef said he could make his very own Hot & Sour Soup. Uncle was unprepared for the best hot & sour he has ever slurped. Chef Roy has sliced the chicken into tiny strips, coated with cornflour and cooked in chicken master stock, julienne of courgette and the secret ingredient of preserved Chinese mustard greens. For the sour, it's Chinese red vinegar. The Hot & Sour Soup is so good Uncle could easily devour a second bowl.
