H O T & SOU R After the Stockroom at Sapphire Show at Sapphire Room, Ponsonby Central, Uncle went to see Chef Roy at nearby Mutiara @mutiara_restaurant. Asked if he had soup, Chef said he could make his very own Hot & Sour Soup. Uncle was unprepared for the best hot & sour he has ever slurped. Chef Roy has sliced the chicken into tiny strips, coated with cornflour and cooked in chicken master stock, julienne of courgette and the secret ingredient of preserved Chinese mustard greens. For the sour, it's Chinese red vinegar. The Hot & Sour Soup is so good Uncle could easily devour a second bowl. Mamak Noodles Uncle had to haul his sorry arse out of the house as he is trying to shake off his man flu, all brought upon himself because of countless forays out in the rain and watching the moon on a cold rainy night sat in an outdoor spa pool. What his tea cosy Aunties would call eejit behaviour. SELAMAT HARI NATAL When an arranged Christmas dinner at a Korean eatery was cancelled, Chef/Owner Boon Lai Lim of Mutiara said he had a 3-course Christmas meal waiting. It was an offer I couldn't refuse. For starters, Chef sent out a festive ”Wing Of An Angel”. It’s stuffed with chicken mince and shiitake mushroom, served on a potato mash with a bbq plum sauce. Finger-licking delicious! The braised tofu had a filling of pork mince and served with a piquant sauce. The hit of the night was the steamed halibut, with a topping of preserved mustard greens, ginger, salted plums and tomato. The classic way of steaming fish. Sedapnya! Mutiara is Malay for pearl. Certainly a Malaysian pearl on Ponsonby Rd, Chef Boon Lai has a very loyal clientele and it’s rare for a restaurant to maintain this longevity.
