Enjoy the tastes of fall with this tasty Fillet Mignon Fall Salad. Fresh greens, sweet cherry tomatoes, roasted butternut squash, and creamy goat cheese go well with tender fillet mignon steaks. Balsamic vinaigrette brings it all together to make a delicious salad that's great for any fall meal.
Ingredients: 2 fillet mignon steaks 6 oz each. 2 cups mixed salad greens. 1/2 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup roasted butternut squash cubes. 2 tablespoons crumbled goat cheese. 2 tablespoons balsamic vinaigrette dressing. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Add salt and pepper to the fillet mignon steaks. In a pan, heat the olive oil over medium-high heat. For medium-rare or any other level of doneness you like, sear the steaks for 3 to 4 minutes on each side. Take the steaks out of the pan and give them a minute to rest. Mix the mixed greens, cherry tomatoes, red onion, and roasted butternut squash together in a large salad bowl. Cut the filet mignon steaks into very thin strips. Slice the steak and crumble the goat cheese into the salad. Add the balsamic vinaigrette dressing and mix everything together. Serve your Fillet Mignon Fall Salad right away and enjoy it!
