Ingredients: 1 cup edamame, cooked and shelled. 1 can chickpeas, drained and rinsed. 1 cup cherry tomatoes, halved. 1/2 red onion, finely chopped. 1/2 cucumber, diced. 1/2 red bell pepper, chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh parsley, chopped. 1/4 cup roasted sunflower seeds. 1 ripe avocado, diced. Juice of 2 limes. 2 tablespoons olive oil. 1 teaspoon maple syrup. Salt and pepper to taste. 1/2 teaspoon cumin. 1/2 teaspoon paprika. 1/4 teaspoon chili powder. 1/4 teaspoon garlic powder.
Instructions: Put the roasted sunflower seeds, red onion, cucumber, red bell pepper, cilantro, parsley, edamame, and chickpeas in a large bowl. For the avocado-lime dressing, mix the maple syrup, salt, pepper, cumin, paprika, chili powder, and garlic powder in a separate small bowl using a whisk. Pour the dressing over the salad and toss it around so that everything is covered. The diced avocado should be added slowly.
