With its creamy and flavorful dressing made of fresh herbs and crunchy vegetables, this potato salad recipe is a twist on an old favorite. This side dish is great for picnics, barbecues, and any other event.
Ingredients: 6 large potatoes, peeled and cubed. 4 eggs, hard-boiled and chopped. 1/2 cup mayonnaise. 1/4 cup sour cream. 2 tablespoons Dijon mustard. 1/4 cup chopped fresh dill. 1/4 cup chopped green onions. 1/4 cup diced celery. Salt and pepper to taste.
Instructions: To make the potatoes fork-tender, boil them in salted water for about 15 minutes. Let it cool down after draining. Add the dill, green onions, celery, salt, and pepper to a large bowl and mix them together. Don't forget to add the Dijon mustard. Mix the cooled potatoes and chopped eggs into the bowl. Use a light touch to mix them with the dressing. Put it in the fridge for at least an hour before you serve it so the flavors can mix. Enjoy! Serve cold.
