Ingredients: 4 cups diced potatoes. 1/2 cup diced onions. 1/2 cup diced celery. 1/2 cup diced carrots. 4 cups chicken broth. 1 cup milk. 1/2 cup heavy cream. 1 cup shredded cheddar cheese. 1/2 cup cooked and crumbled bacon. 2 tablespoons butter. 2 tablespoons all-purpose flour. Salt and pepper to taste. Chopped green onions for garnish.
Instructions: In a large pot, melt the butter over medium heat. Add onions, celery, and carrots. Saut for 5 minutes until they begin to soften. Stir in flour and cook for 2 minutes, stirring constantly. Gradually add chicken broth, stirring to combine. Bring to a boil. Add diced potatoes and reduce heat to simmer. Cook until potatoes are tender, about 15-20 minutes. Use an immersion blender to partially blend the soup, leaving some chunks for texture. Stir in milk, heavy cream, and shredded cheddar cheese. Cook until cheese is melted and soup is heated through. Season with salt and pepper to taste. Serve hot, garnished with crumbled bacon and chopped green onions.
