Chunky Southwestern Quinoa Salad is tasty and good for you because it is full of protein and fresh vegetables. It tastes great because of the lime dressing, which is tangy and full of good things for you.
Ingredients: 1 cup quinoa, rinsed and cooked. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels, fresh or frozen. 1 cup cherry tomatoes, halved. 1 avocado, diced. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup feta cheese, crumbled. 1 lime, juiced. 2 tablespoons olive oil. 1 teaspoon cumin. 1/2 teaspoon chili powder. Salt and pepper to taste.
Instructions: In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, avocado, red onion, cilantro, and feta cheese. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper. Pour the dressing over the quinoa mixture and toss until well combined. Refrigerate for at least 30 minutes before serving to allow flavors to meld. Garnish with additional cilantro and feta before serving.
