Bai Hao Yin Zhen (China, Fujian)

White tea consisting of buds exclusively. I bought this tea in Teahouse Amana in Prague (Czech Republic) and I was delighted. Yin Zhen's long, robust leaves are covered by silver fluff, the scent of dry leaf is sweet and fresh. Yellowish drink has delicate, silky taste with a sweet fruity touch resembling dried pears and apples.

I like to prepare white teas in a little glass gaiwan. I use gaiwan if the tea needs lower temperature (I brewed Yin Zhen with somewhere around 75°C) and the glass is an excellent choice if you like to observe beautifully shaped teas.
