Cheesy Pasta Bean Bake
This has so many comfort foods all rolled into one - cheese...pasta...tomato ...beans. Just throw it together, heat and enjoy - so do it. The mushrooms are optional, so is the cheese if you need to go dairy free. Throw in 1 c. frozen defrosted corn in to add some color. Experiment with other varieties of beans such as small white, black, kidney - see what you come up with.
2 - 14.5 oz. cans crushed tomatoes, with liquid
1 t. garlic powder
1 t. oregano
1 t. kosher salt
slight dash red pepper flakes
olive oil
1 lg. onion, diced
1 - 15.5 oz. can cannellini beans, drained
1 c. mushrooms, sliced thin
2 c. cooked whole wheat elbow macaroni
2/3 c. Parmigiano Romano cheese, finely grated
Option: Add diced ham or cooked ground beef to use up your leftovers
Preheat oven to 350 degrees. In a large bowl, add tomatoes, garlic powder, oregano, salt, and red pepper mixing well - set aside. Saute onion in olive oil. In a large baking dish, add onion, cannellini beans, mushrooms, and macaroni pouring tomato mixture overall gently working that into the rest of the ingredients. Sprinkle cheese over all. Bake 30 - 40 min. until heated through to bubbling and cheese is melted to just browning.

Last week was that time of the month when the groceries are almost consumed, a trip to Grocery Store is in order for the weekend and you are left with limited choices to cook just before the most awaited excursion. Also, HI was out of town and his arrival was scheduled the same day. I always try to welcome him to a different/ new kinda dinner meal but all I had were some boneless chick pieces lying in my freezer hence the dilemma. As a result of which the quest to find out a new, easy and good recipe began. After swiping through almost hundreds of recipes, I stumbled upon this recipe by Tasty Grill which looked super easy yet fancy 😉
But I was not quite impressed by Tzatziki Sauce that was being prepared as the condiment with Gyro in that particular recipe. I don’t know why but the Gyros immediately reminded me of ‘Which wich’ sandwich we once had back in Dubai and suddenly an idea landed with lightning speed in my mind; to follow their idea of ‘Build Your Own‘ sandwich from a variety of toppings. With the same velocity, I opened their site and chose the toppings which were readily available at home that time – Tadaa, I was ready to design my very own Gyro now.
I was not left with much time because plenty of it was lost in the searching part. But I was glad that I emerged successful in the hunt; the recipe was effortless (I ‘almost’ did nothing) and looked really eye catchy, I just tweaked it a little to suit our taste buds. And it lived up to the expectations very well. HI was underestimating those small bombs but as soon as he tasted one, he was clean bowled. E also loved those, she even uttered ‘Yummy’ to the pictures while I was editing them today for the post 😀

About Doner & Gyros: Doner (Turkish kebab) and Gyro (Greek dish) both are made of meat cooked on a vertical rotisserie. Gyros are usually served wrapped in a flatbread such as pita, with tomato, onion, and tzatziki sauce. The history of Doner kebab dates back to 18th century while the Gyros came into being in 19th century.
Since I am not using the traditional tzatziki sauce from Gyros and combining the characteristics of both Doner and Gyros hence the name of dish – ‘Doner Gyros’ 😉 (a fusion of Turkish and Greek cuisines)

GET: Oven Bowl Baking Tray Parchment Paper Skewer(s) Spoons
SET: Chicken boneless pounded (preferably thighs) 1 kg Onion cut in half from centre (peeled) Skewer 1
Marination Ingredients: Yogurt 2 cups (about 400 gms) Salt 1 tbsp Garlic cloves 1 tbsp (chopped) Lemon juice ¼ cup Chili powder 1 tbsp Coriander powder 1 tbsp Paprika powder 1 tbsp Cumin powder 1 tbsp Cinnamon powder 1 tsp Black pepper 1 tsp Oil ¾ cup
Assembling Ingredients: Pitas 7-8 Sliced onions Sliced tomatoes Mayonnaise Mustard Sauce BBQ Sauce Sweet Chili Sauce Thousand Island Sauce Cheese Slice
GO:
Preheat oven to 400°F (200°C). Marinate pounded chicken thighs with all the Marination ingredients for at least 2 hours. On parchment paper in the baking tray, use the onion half as a base and position the skewer vertically like a spit. Skewer the chicken thighs individually, rotating each one 90 degrees. Bake for 1-1.5 hour. Cut the chicken slices like the Turkish kebab guys do. Fill the pita with chicken slices and all the assembling ingredients mentioned above. Serve hot.
Please excuse the presentation, we were too late for dinner hence the not-so-fancy look. But they tasted yummilicious 😀
MY TWO CENTS: Adjust the spices to suit your taste buds. You can use chicken breast pieces as well but thighs will be juicier. You can use your choice of sauces, veggies and dressings to fill the pita. Baking times may vary depending upon your oven, you may check the progress in between to ensure that the chicken doesn’t get overcooked. You can visit the Which Wich site at this link to have an idea about the toppings you may use in your custom Doner-Gyro 😉

Spinach Lasagna Roll Ups
I found this recipe from Budget Bytes and thought it would be good to try out before school.
I think I filled each roll too much, because the filling only make 10. Since I had a lot of lasagna noodles, I decided to make another small lasagna later. When I made this, I kept it in the fridge, without covered in sauce, for a few hours until I baked it. I don’t know if that changed it at all. At first I didn’t really like it, but when I reheated it today it tasted much better. I forget that lasagna is better after the second day.
Overall, it was good and easy and I will probably make it again.
Baked Mushroom Risotto
I have had trouble with risottos, so I was really happy with how easy this one was. I found this recipe from Sarcastic Cooking.
It was pretty easy and didn’t take long. It didn’t involve a lot of active cooking time. Making the mushroom stock just involved boiling water. I finished sauteing the other mushrooms and everything before the mushroom stock was ready, so I put it to the side and added the dry rice. It was fine. Baking the whole thing was also easy. I used cream cheese and had a bit of trouble with that. It didn’t melt. It stayed clumped up as it cooked. I just stirred the whole thing a bit when it was done and it was good enough. I would add more spices, though; a lot more spices. It was fairly tasteless, but I added salt and pepper and it worked. The texture was great.
The risotto was pretty good and super easy. I spent the downtime studying and needed to do something whenever I needed a break. It worked well.
Overall, this was good and something that I will probably make again.
Our first Christmas :) It wasn't much but just having him here was the most amazing thing. He is the one who keeps me sane. He is the one that makes me smile. He is the one that makes my day. Hope you loved dinner :)
