These Baked Apple Pie Rice Paper Rolls are a tasty and Paleo-friendly take on the traditional apple pie, making them a healthier choice for dessert. The crispy rice paper adds a satisfying crunch, and the flavors of almond butter and spices are warm and comforting.
Ingredients: 4 rice paper wrappers. 2 apples, peeled, cored, and thinly sliced. 2 tablespoons almond butter. 1 tablespoon honey or maple syrup for strict Paleo. 1 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon ground cloves. 1/4 cup chopped walnuts optional. Coconut oil for brushing.
Instructions: Preheat your oven to 350F 175C. In a small bowl, mix almond butter, honey or maple syrup, cinnamon, nutmeg, and ground cloves until well combined. Dip each rice paper wrapper in warm water for a few seconds until it becomes pliable. Lay it flat on a clean surface. Spread a thin layer of the almond butter mixture onto each rice paper wrapper. Place apple slices on top of the almond butter mixture, and sprinkle with chopped walnuts if desired. Fold the sides of the rice paper wrapper inwards, then roll it up like a burrito, making sure the filling is secure. Brush the rolled rice paper rolls with a little coconut oil to help them crisp up in the oven. Place the rolls on a baking sheet and bake for 15-20 minutes or until they turn golden brown and crispy.
