Instructions: Preheat oven to 400F 200C. In a shallow dish, mix together gluten-free breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper. Coat each chicken breast in olive oil, then dredge in the breadcrumb mixture, pressing to adhere. Place the coated chicken breasts on a baking sheet lined with parchment paper.
