Ingredients: 4 skinless, boneless chicken breast halves. 1/2 cup low-fat buttermilk. 1/2 cup whole wheat breadcrumbs. 1/4 cup grated Parmesan cheese. 1 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/2 teaspoon cayenne pepper. 1/2 cup barbecue sauce. 1 tablespoon hot sauce. Cooking spray.
Instructions: Warm up the oven to 200 degrees C 400 degrees F. Lay the chicken breasts out on a solid, level surface between two heavy plastic sheets. Reusable freezer bags work well. Use the smooth side of a meat mallet to pound the chicken hard until it is about 1/2-inch thick. Add salt and black pepper to both sides of the chicken. Place buttermilk in a bowl that is not too deep. Add chicken breasts and toss to coat. Put it in the fridge for 30 minutes. In a different shallow bowl, mix the breadcrumbs, Parmesan cheese, paprika, garlic powder, onion powder, and cayenne pepper. Take the chicken out of the buttermilk and coat each breast in the breadcrumb mixture. Press the crumbs onto the chicken. Use cooking spray on a baking sheet. Put the chicken breasts on the baking sheet. The chicken is done when the juices run clear and there is no more pink meat in the middle. This should take about 20 to 25 minutes. BBQ sauce and hot sauce should be mixed together in a small bowl while the chicken is baking. Dip the chicken in the spicy barbecue sauce that you serve with it.
