There is nothing quite like it. The salt insulates the fish and locks in all the moisture. It also creates a very even slowly penetrating heat that is perfect for getting just the right temperature from #head to #spine to #tail. This #meat was so #soft and #supple that it just dissolved across our palates. I hit it with just a ribbon of olive oil and nothing else.
