Baked some cookies. Almost burned half the batch but luckily managed to salvage it.

Pecans should not be this much hassle
Since it's the Easter weekend, my friends and I have decided to go for a picnic on Monday. And because I will be at work all day Easter Sunday, I wanted to do my food preparing today. Pumpkin couscous salad and pecan pie. Nothing spectacularly complicated and it will use up the leftover pastry in the freezer and that can of chickpeas that's sitting in the pantry. Just need: pumpkin, feta, rocket and oh, pecans for the pecan pie having had a rather heated discussion with my friends as to whether I could leave the pecans out. Answer: NO! That's fine, I'll just walk up to the IGA (my local supermarket) and get them. Pumpkin, feta: check Rocket: no, but I have baby spinach at home. I can use that instead. Pecans: nope. And they didn't have any in the greengrocer's either. Walnuts, almonds, macadamias, even whole peanuts in their shells but no pecans. This is an annoyance because it means I have to get the bus up to the station where there is a bigger supermarket and hppe against hope that they have some. So home for a very quick lunch and back out to the busstop in time to catch a bus that will give me roughly twenty minutes to walk across the station concourse, up to the Coles on the other side, do my shopping and get back to the busstop to get the next bus home so I don't have to walk because it takes almost an hour. Pecans: YES! Also rocket. And I bought myself an iced coffee because I was like, 'yes, I deserve this.' And that is the tale of my unnecessarily long expedition to find pecan nuts. I just hope I have enough pastry.
