baking without butter is simple and almost second nature now. having learnt from some friends who bake without any oil, or eggs, which is also known in some circles as a vegan way of life, i have adapted the recipes according to taste, which these days includes adding almond milk, and peanut butter to the breads i bake. the yeast is sourdough starter, so has to be left outside for the culture to start, and for it to become warm enough to rise, sometimes it leads to these white looking bubbles.
i used the flour from three different sources, chhana atta(chickpea flour), Jowar and Bajra flour. once the first kneading of the dough is done, the bread needs to be left to rise double it's original size. If only we all would support each other, giving the needed time, space and energy, till each of us attained the amount of spiritual and physical rising and reached our full potential, we would be a softer society.
the cracks are a sign that the bread has risen to it's full possibilities, and then needs to be knocked back down for the second rising. how this process emulates in real life, as the more life knocks us down, the spirit soares, each time, filling the air inside us and beneath our wings, to take flight , once again, yet again..
