A simple and tasty chicken burger with the tastes of a classic Caprese salad. It has grilled chicken marinated in balsamic vinegar, fresh mozzarella, cherry tomatoes, basil, and a balsamic glaze on top.
Ingredients: 4 boneless, skinless chicken breasts. 1/2 cup balsamic vinegar. 2 tablespoons olive oil. 4 burger buns. 4 slices fresh mozzarella cheese. 1 cup cherry tomatoes, sliced. 1/4 cup fresh basil leaves. 2 cloves garlic, minced. Salt and black pepper to taste. 1 tablespoon balsamic glaze for drizzling.
Instructions: In a bowl, combine the balsamic vinegar, olive oil, minced garlic, salt, and black pepper. Place the chicken breasts in a resealable plastic bag and pour the balsamic marinade over them. Seal the bag and refrigerate for at least 30 minutes to marinate. Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Brush with extra marinade during grilling. While the chicken is cooking, toast the burger buns on the grill until lightly golden. Assemble the burgers: Place a cooked chicken breast on the bottom half of each bun. Top with a slice of fresh mozzarella, sliced cherry tomatoes, and fresh basil leaves. Drizzle a little balsamic glaze over the toppings.
