This balsamic chicken rotini is easy to make and tastes great. It's great for a busy weeknight dinner. The dish tastes rich and sweet from the caramelized onions, and tangy from the balsamic vinegar.
Ingredients: 1 lb chicken breast, diced. 2 cups rotini pasta. 2 onions, thinly sliced. 2 cloves garlic, minced. 1/4 cup balsamic vinegar. 2 tbsp olive oil. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Follow the directions on the package to cook the rotini until it is al dente. Then, drain it and set it aside. Warm up the olive oil in a big pan over medium-high heat. It will take about 5 to 7 minutes of cooking after adding the diced chicken until it is browned and fully cooked. Take the chicken out of the pan and set it aside. Put garlic and sliced onions in the same pan. Let the onions cook for about 5 minutes, or until they turn brown. Put the cooked chicken back in the pan. Put the vinegar over the chicken and onions. Combine everything well, then let it cook for two to three minutes. Add pepper and salt to taste. Put the cooked rotini in the pan and mix everything together until it's well covered. Before serving, sprinkle with fresh parsley.
