These Banana Nut Muffins are incredibly moist and packed with the delicious flavor of ripe bananas and crunchy nuts. They are perfect for breakfast or as a snack, and you can easily make them ahead to enjoy anytime.
Ingredients: 2 ripe bananas, mashed. 1/3 cup melted butter. 1/2 cup granulated sugar. 1 egg, beaten. 1 teaspoon vanilla extract. 1 teaspoon baking soda. 1 pinch of salt. 1 1/2 cups all-purpose flour. 1/2 cup chopped walnuts or pecans.
Instructions: Start by heating the oven to 350F 175C. Put grease in a muffin tin or use paper liners to line it. To make the bananas smooth, use a fork to mash them in a bowl. Add the melted butter to the banana mash and mix it in. The granulated sugar, beaten egg, and vanilla extract should all be mixed in. Put the baking soda and salt on top of the banana mixture and mix it all together. Mix in the flour and chopped nuts, then stir just until they are combined. Fill up each muffin pan cup about two thirds of the way to the top with muffin batter. After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. For a few minutes, let the muffins cool in the pan. Then, move them to a wire rack to cool completely. Serve and have fun!
