Cinnamon banana muffins

Stay at home Banana Pecan Muffins.  Yummy!  Made with homemade baking powder  (recipe on the interenet) since I didn’t have any that less than 2 years expired.  I knew there was a reason I bought some cream of tartar!  Will definitely be making these again when I have extra bananas.

Banana Muffins

I'm a big fan of bananas, if you can't already tell. These babies are gooey, moist, sweet, and kinda perfect!

Duration: 45-50 minutes 

Makes: 12 muffins

What you’ll need: 

- 2 medium ripe, mashed bananas

- 1 cup vegetable oil

- 1 cup coconut milk

- 3 cups all-purpose flour

- 1 cup granulated sugar 

- 1/2 cup dark brown sugar 

- 2 tsp cinnamon 

- 1 tsp nutmeg 

- 1 tsp salt 

- 2 tsp baking powder 

- 1 tsp baking soda 

- Banana slices for garnish (optional) 

Directions: 

1. Preheat oven to 350 degrees and line a muffin tin with 12 paper liners. 

2. Mix mashed bananas, vegetable oil, and coconut milk in a stand mixer or large bowl until smooth. 

3.  Mix flour, white sugar, brown sugar, cinnamon, baking powder, baking soda, nutmeg, and salt together in a medium bowl. 

4. Slowly add your dry ingredients to your wet ingredients until fully incorporated. 

6. Fill muffin cups about two-thirds of the way with batter. 

7. Bake for 30-35 minutes, or until a toothpick can be inserted into the center of the muffin and comes out clean with a few crumbs.
