This vegan banana pudding is creamy, indulgent, and bursting with banana flavor. It's made without tofu and is perfect for satisfying your sweet cravings.
Ingredients: 4 ripe bananas. 1/2 cup coconut milk. 1/4 cup maple syrup. 1 tsp vanilla extract. 1/4 tsp cinnamon. 2 tbsp cornstarch. 1 cup almond milk. 1/2 cup crushed vegan vanilla wafers or cookies. Sliced bananas and crushed nuts for topping.
Instructions: Put three bananas, coconut milk, maple syrup, vanilla extract, and cinnamon in a blender. Blend until the mixture is smooth. Whisk the almond milk and cornstarch together in a saucepan until they are well mixed. Put the banana mixture into the saucepan. Cook over medium heat, stirring all the time, for about 5 to 7 minutes, or until it gets thicker. Take it off the heat and let it cool down for a while. Crush vegan vanilla wafers or cookies and put them on top of the pudding in bowls or glasses for serving. Cut up the last banana and put slices on top of the pudding. Put it in the fridge for at least an hour before serving and then top it with crushed nuts.
