Ingredients: 1 lb dried pinto beans, soaked overnight. 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 15 oz diced tomatoes. 1/2 cup ketchup. 1/4 cup molasses. 2 tbsp Dijon mustard. 2 tbsp apple cider vinegar. 1 tbsp chili powder. 1 tsp cumin. Salt and pepper to taste. 4 cups beef broth. 1/2 cup fresh cilantro, chopped for garnish.
Instructions: In a large pot, combine soaked beans and beef broth. Bring to a boil, then simmer until beans are tender about 1-2 hours. In a skillet, brown ground beef. Add diced onion, garlic, and bell pepper. Cook until vegetables are softened. Add the cooked beef mixture to the pot of beans. Stir in diced tomatoes, ketchup, molasses, mustard, vinegar, chili powder, cumin, salt, and pepper. Simmer the mixture for an additional 30-45 minutes, allowing flavors to meld.
