conocí al maestro de maestros de la cocina vasca. yo lo respeto…! todos estos alimentos que cocinó para nosotros eran mejores que cómo se ven esas fotos. Muchisima gracias señor Fukaya. 俺が知る限り、日本にはたくさんの素晴らしいイタリア料理人がいる、フランス料理人も然り。 ではスペイン料理はどうか？ そもそも日本人の中ではイタリア・フレンチ・中華料理が絶対的な外食のメジャーで、和食を崇拝し過ぎている傾向にある。 (和食が遅れているのは野菜軽視、砂糖偏重故に懐疑的になっている) 函館が、道産子が、日本人の料理好き、スペイン好きが誇って良いお店に来る事が出来た。 ピレネー山脈を挟んで二つの国に分けられたバスクの伝統料理、スペイン料理の日常、文化を持ち込んでくれたような人であった。そして彼自身も料理する事を愛していたし、僕たち若造の質問にも丁寧に料理方法から答えてくれた。 農業者および生産者と料理人が一緒に旅をすると、どちらに伺っても神がかった体験が出来る。 僕からすれば、この巨匠が自ら最前線で腕をふるい、後進の成長を案ずる姿に料理の世界で"左手団扇"になってるグータラ若造料理人達や、ケミカルラクチン生産者達に「もっと一生懸命に、そして楽しくものを作れ」と言いたくなった。 確かにスペイン料理はイタリア料理、フランス料理、およびそれらのヌーベルキュイジーヌにくらべて今の世的に言えば"映えない"写り方だろう、実際今回ここにメモするお料理の中で野菜の煮込みなんかは写真では絶対にわからないおいしさがあった。 こんな人に使ってもらえる様な野菜を作れれば尚更！と感じた。素晴らしい旅の締めくくりには完璧過ぎた。 コロナですっかり遠くなった海外、特に自分が心の一部を置いてきたと言っても過言ではないスペイン… その日常を感じれる刹那があった。　皆が皆感動した。 一緒に行けなかった井口さんも連れて姉妹店リベンジ！！…も視野に入れて再訪したい場所がまた一つ国内にも増えて良かった。 #basque #basquecuisine #cuisine #chef #maestro #master #spain #españa #españa🇪🇸 #spain🇪🇸 #🇪🇸 #バスク料理 #バスク #バスク風チーズケーキ #スペイン #スペイン料理 #comidaespañola #comida #cenar #cena #農業者の旅 #食べ歩き #巨匠 #深谷宏治シェフ #深谷宏治 #レストランバスク #tapeando (レストランバスク) https://www.instagram.com/p/CbU81SAv0ky/?utm_medium=tumblr

Highlights of Wine Tasting Class in San Francisco at Piperade Restaurant. Wonderful chef, Gerald Hirogoyin and his wife Cameron bringing you flavors of the West Basque Country of France and Spain. I had the Duck 🦆 Confit, and as appetizer frisée with Octopus 🐙 which paired exquisitely with Garnacha wine from Spain! Garnacha is one of the main grapes varietals from Spain, along with Tempranillo. In France its the same or similar grape,Grenache, and is used in many wine blends. As in Grenache, Syrah and Cinsault or Mourvèdre to create the historical wine, Chateauneuf du Pap. I hope to try the Paella next time. Thank you for authentic Basque experience,Chef Gerald!
