Compared to its predecessors (such as Batch 8 or 9), Batch 10 seems slightly more focused on the bourbon side. While Batch 9 was somewhat “darker” and fruitier due to a higher proportion of sherry casks, Batch 10 returns to the pure, bright energy that Kilkerran fans love so much.
Kilkerran Heavily Peated Batch 10 is not a whisky for beginners looking for gentle caresses. It is honest, powerful, and perfectly embodies the “industrial chic” of Campbeltown.

Alas, the ginger ale I made (both with apple juice and without) is too tart and astringent. I attribute this to leaving the ginger and jalapeño in throughout fermentation. If I make ginger beer again, I’ll simply take the nylon bag out after the boil. As is, if the ginger ale is chilled and it’s hot outside, I can handle about a pint of it. Of course, you could say the same thing about malt liquor. And the fact that my wife does not like it, makes it likely I will try other things before trying to brew ginger ale again.
But I brought a quart of ginger ale over to my cousin’s house who is a big time bourbon drinker, keen to tinker with ingredients. He helped me to discover some appealing ways to capitalize on the ginger beer surplus. Some of the concoctions were hit or miss, but I found all of the following recipes to be delicious.
High Rye
1 shot rye whiskey
1 shot ginger ale
Pour into a rocks glass, stir and enjoy.
Bourbon Unicorn
3 shots ginger ale
1 shot bourbon
dash of simple syrup
Combine ingredients in rocks glass, optionally with ice. Stir and enjoy.
Bourbon Zebra
3 shots ginger ale
1 shot bourbon
dash of simple syrup
fresh mint sprig
Muddle mint and simple syrup at the bottom of a shaker pint glass. Add ginger ale and bourbon, and shake. Strain and enjoy.
Fourth of July Edit
4 ounces apple juice
12 ounces ginger ale
Add chilled ginger ale to pint glass with apple juice. Happy Fourth of July!

Batches 10 and 11 Update 2: Ginger Ale and Apple Ginger Ale
In addition to taping on the not totally fancy labels as pictured, I removed the nylon bags containing ginger and jalapeno. Removing the bags stirred up a lot of sediment though, so I will let the jars sit for another day. Then I will bottle.

About 24 hours after brew day and the fermentation has really taken off. I’m having more success than previously with the same Safale S-04 yeast, and I can think of three reasons why:
I pitched at almost exactly 68 F.
I used half a teaspoon per gallon of S-04.
I closed the lid, but did not attach the airlock for the first 24 hours.
Previously I pitched at around 77 F, only used 1/4 of a teaspoon of yeast, and attached the airlock right away. I ended up having to add more yeast to those earlier batches.
