doenjang stew, bean paste stew(korean traditional food)
ITM: Korean Doenjang Jjigae (Bean Paste Stew)
Hahaha! First post and I already am posting about food! Anyway, ITM is a subcategory here in my sweet little tumblr... It stands for "I Tried Making..." Whatever I make - food, crafts, clothes... O.o? I will try to take pictures and post them here on tumblr. I've always wanted to do this kind of stuff but never had the time to make time for it...
After a long walk from the library, I was hungry and wanted to just have something to eat, to make the long story short, I decided to make Bean Paste Stew today.
So a bit background on what a Bean Paste Stew is...
Bean paste stew or doenjang jjigae is aa korean dish made of fermented soy bean. So you would need one of those already made doenjangs. They are usually sold in korean markets or groceries.
To make this doenjang jjigae, I used...
1 1/2 tbsp of doenjang ()
10 pcs anchovies
4-5 cups of water
1 medium size onion
2 small potatoes
1/2 tofu from a package
1 medium size zucchini
1 green onion
minced garlic
pepper corn
To cook the doenjang jjigae...
1. Mix 1 1/2 tbsp of doenjang with 4-5 cups of water in a pot. This will be our broth. It doesn't have to be very well mixed. Also, if you want your broth thick, just use 4 cups or if you want the jjigae to be less salty and less thick consider adding 1-2 more cups of water.
2. Get the anchovies. The anchovies that we want for this recipe would be those big ones; they are better to use for making the stock. Remove their heads and the insides, this will lessen the unwanted fishy flavor of the anchovies in your jjigae. Add them to the doenjang+water in the pot. Wait until it boils.
3. While boiling the stock, you can proceed and cut the potatoes, onion, and zucchini. There are other vegetables you can add to a jjigae but these are the ones inside my refrigerator.
4. After the broth has boiled for a bit, remove the anchovies. You can include them with the soup if you like... It all depends to your preference.
5. Add the vegetables and boil again. During this time, you can also add uncooked seafood. If you have those cooked ones already, you can wait and put them in together with the tofu.
6. While the vegetables and the broth boil together, you can cut the tofu, the green onion, and the garlic. You can add them when the vegetables are cooked. (If you like to spicy things up a bit, you can try adding a bit of korean pepper flakes. Since I don't want to be the only one eating this, I decided to just add a bit of pepper corn for that tinge of spicy.) Boil it for a few more minutes and serve hot.
This should be able to feed about 3-4 people.
